Apple cider isn’t just for fall, folks. Even if that’s when it’s most widely available, the flavor is DELICIOUS and crave-worthy any time of year.
At least, that’s my opinion. 😉
I am a total apple lover and have one per day (doctor’s orders? lol). But I also love making apple-flavored baked goods. I recently stumbled upon a bag of Apple Cider Donut Cereal on sale at Sprouts and immediately knew I had to buy it!
The cereal is awesome on its own, but I knew it would make a great addition to my other latest obsession: skillet cookies.
Apple Cider Donut Snickerdoodle Skillet Cookie
I’ve recently become obsessed with making skillet cookies since I picked up two Lodge Cast Iron Skillets…so expect more skillet cookie recipes all year long.

With only 4 simple ingredients, this easy-to-make skillet cookie is:
- grain-free
- gluten-free
- low-carb
- high fiber
- no added sugar
- dairy-free
- oil-free
And not to mention, SUPER easy to make. The perfect way to satisfy your cookie AND cereal cravings at the same time.
How to Make an Apple Cider Donut Skillet Cookie
This Apple Cider Donut Skillet Cookie couldn’t be simpler to make. All you have to do is mix the wet ingredients (egg whites and applesauce) together, then pour in a bag of grain-free sugar-free Snickerdoodle Cookie mix. Once evenly combined and a thick texture is achieved, scoop the batter into your prepared cast iron skillet. Sprinkle the crushed Apple Cider Donut Cereal on top. Bake, cool, and then dive into your EPIC healthy treat.
Note: If you’re having trouble finding Apple Cider Donut Cereal, swap in Cinnamon Toast Crunch Cereal instead.

Apple Cider Donut Skillet Cookie

Instructions
Preheat oven to 350 degrees F. Spray a 6.5 inch cast iron skillet with cooking spray and set aside.
In a small bowl, stir together cookie mix, applesauce/pumpkin, and egg whites. Pour batter into the prepared skillet and spread until evenly distributed. Sprinkle with crushed cereal.
Bake for 30 minutes. Remove from oven and let cool completely before slicing into 8 pieces.
